A Truffle Poached Egg and Avocado on Toast is a luxurious, yet simple, dish that combines creamy avocado, rich poached egg, crunchy nuts, and aromatic truffle oil on a toasted slice of your favorite bread. This makes for a satisfying breakfast, brunch, or even a light dinner. The truffle oil elevates the flavors and adds an earthy depth to the dish, while the creamy avocado and silky egg yolk come together perfectly.
Ingredients:
- 2 slices of rustic bread (sourdough, multigrain, or your favorite bread)
- 1 ripe avocado
- 2 large eggs
- 1 tablespoon truffle oil (white truffle oil or black truffle oil, depending on your preference)
- 1 tablespoon butter or truffle butter (for toasting)
- 1/4 cup mixed nuts, chopped (e.g., almonds, walnuts, pine nuts, or hazelnuts)
- Freshly cracked black pepper (to taste)
- Sea salt or truffle Salt (to taste)
- 1 tablespoon fresh lemon juice (optional, for a little acidity)
- Fresh herbs (optional, like chives, parsley, or thyme, for garnish)
Instructions:
Toast the bread:
- Heat a pan over medium heat and melt butter in it.
- Place the bread slices in the pan and toast until golden and crispy on both sides (about 2-3 minutes per side). You can also toast the bread in a toaster if you prefer.
- Once toasted, remove from the pan and set aside.
Prepare the avocado:
- While the bread is toasting, slice the avocado in half, remove the pit, and scoop out the flesh.
- Mash the avocado with a fork in a small bowl. Add a squeeze of lemon juice (if using), a pinch of sea salt, and a few cracks of black pepper. Set aside.
Poach the eggs:
- Bring a pot of water to a gentle simmer (not a rolling boil) and add a splash of vinegar to help the eggs hold their shape (optional).
- Crack each egg into a small cup or ramekin.
- Stir the simmering water gently to create a whirlpool, and then carefully slide the eggs into the center of the swirl, one at a time.
- Let the eggs cook for 3-4 minutes, or until the whites are set but the yolks are still runny. If you prefer a firmer yolk, cook them for an extra minute or two.
- Use a slotted spoon to remove the eggs from the water and place them gently on a paper towel to drain excess water.
Toast the nuts:
- While the eggs are poaching, toast the nuts in a small pan over medium heat for about 2-3 minutes until golden and fragrant. Keep an eye on them to avoid burning. Once toasted, set aside.
Assemble the toast:
- Spread the chopped/mashed avocado evenly on the toasted bread slices.
- Drizzle the truffle oil generously over the avocado.
- Cut the poached egg and place on top of each slice of toast.
- Sprinkle the toasted nuts over the eggs and avocado, adding crunch and flavor.
- Finish with a pinch of sea salt/ truffle salt and a few cracks of black pepper. If you like, garnish with fresh herbs such as chives or parsley for added freshness.
Serve immediately:
Slice the toast into halves or quarters, and serve while the eggs are still warm and the yolk is runny.
Optional Variations:
- Cheese: For added richness, you can sprinkle some shaved Parmesan or goat cheese on top before serving.
- Sautéed mushrooms: Adding some sautéed mushrooms with a touch of truffle oil can enhance the earthiness of the dish.
- Bacon or prosciutto: If you'd like a salty contrast, crispy bacon or prosciutto slices are a great addition.
Tips:
- Poaching eggs can be tricky, but the whirlpool method ensures they keep their shape. If you're not confident about poaching, you can also use soft-boiled eggs as an alternative.
- Truffle oil: A little goes a long way. Start with a small amount and adjust to your taste.
- Nuts: Feel free to experiment with different nuts depending on your preference. Pistachios or cashews can also work wonderfully.
This Truffle Poached Egg with Nuts and Avocado on Toast is the perfect combination of creamy, crunchy, savory, and earthy flavors. The rich yolk of the poached egg combined with the creamy avocado and the toasted nuts creates a satisfying and luxurious dish. Enjoy it as a decadent breakfast or brunch treat!
